Eggplant rolls with fresh cheese

Instructions

  • 1.   Cut the eggplant into thin slices lengthwise and brush them with olive oil.
  • 2.   Brown them in a frying pan for 10 to 12 minutes, flipping them halfway through cooking, then let them cool.
  • 3.   Rinse, dry, and finely chop the herbs, then put them in a bowl with the fresh cheese. Mix well.
  • 4.   Place 1 to 2 tablespoons of the mixture at one end of an eggplant slice and roll it up. Repeat for the remaining rolls. Serve with a green salad.

  • 10 leaf of fresh basil
  • 10 leaf of fresh coriander
  • 200 g of cream cheese
