Eggplant rolls with fresh cheese

. Cut the eggplant into thin slices lengthwise and brush them with olive oil.

. Brown them in a frying pan for 10 to 12 minutes, flipping them halfway through cooking, then let them cool.

. Rinse, dry, and finely chop the herbs, then put them in a bowl with the fresh cheese. Mix well.

. Place 1 to 2 tablespoons of the mixture at one end of an eggplant slice and roll it up. Repeat for the remaining rolls. Serve with a green salad.
