2. Rinse the chives and spinach. Drain and chop the chives.
3. Mix the cream and mustard in a bowl. Add the chives.
4. Divide half of this mixture into the bottom of 4 cocotte dishes. Cover with spinach and then the remaining cream.
5. Crack 1 egg into each cocotte dish.
6. Bake for 10 minutes. Season with salt and pepper before serving.
