Zucchini and Thyme Muffins

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
  • 2.   In a bowl, mix together the flour, baking powder, eggs, Greek yogurt, olive oil, and a pinch of salt.
  • 3.   Wash the zucchini and grate them coarsely. Strip the thyme leaves. Crumble the goat cheese.
  • 4.   Add these ingredients to the batter, season with salt, and mix well.
  • 5.   Fill a muffin tin about 2/3 full.
  • 6.   Bake for 20 minutes. Serve with a green salad.
