Zucchini and Thyme Muffins

Instructions

. Preheat the oven to 200°C (400°F).

. In a bowl, mix together the flour, baking powder, eggs, Greek yogurt, olive oil, and a pinch of salt.

. Wash the zucchini and grate them coarsely. Strip the thyme leaves. Crumble the goat cheese.

. Add these ingredients to the batter, season with salt, and mix well.

. Fill a muffin tin about 2/3 full.

. Bake for 20 minutes. Serve with a green salad.
