Grilled Zucchini with Tofu

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Cut the zucchini in half lengthwise.
  • 3.   Cut the tofu into cubes and blend it.
  • 4.   Peel and chop the garlic. Rinse, separate, and blend the parsley.
  • 5.   Add the garlic, parsley, yogurt, salt, and pepper to the blender and blend.
  • 6.   Fill the zucchini halves with this mixture and sprinkle them with grated gruyère cheese.
  • 7.   Bake for 30 minutes and serve with rice, for example.
