Zucchini and Pumpkin Quiche

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Remove the skin and seeds from the pumpkin, and cut it into large cubes.
  • 3.   Wash and slice the zucchini.
  • 4.   Sauté the vegetables in butter, season with salt and pepper, they should become tender.
  • 5.   Roll out the pastry in a buttered and floured pie dish. Prick it with a fork. Bake it blind for 10 minutes.
  • 6.   Beat the eggs with the cream. Season and add nutmeg.
  • 7.   Spread the vegetables on the pre-baked pie crust. Pour the mixture over them.
  • 8.   Bake at 200°C (400°F) for 20 minutes.
