Stuffed round zucchini with bulgur and goat cheese

Instructions

  • 1.   Cook the bulgur according to the instructions on the packaging, adding a cube of organic vegetable broth to the cooking water.
  • 2.   Cut off the top of each zucchini, hollow them out, and steam them for 10 minutes.
  • 3.   Peel a small onion and thinly slice it. Do the same with the garlic. Rinse and finely chop the parsley and coriander.
  • 4.   Mix the cooked bulgur with the cheese cut into small pieces, garlic, onion, salt, pepper, and herbs. Stuff the zucchini with this mixture.
  • 5.   Bake in a preheated oven at 180ºC (350ºF) for 20 to 30 minutes.
