Instructions

  • 1.   Wash and dice all the vegetables.
  • 2.   Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  • 3.   Sauté the onion, zucchini, and eggplant in olive oil. Cook for 15 minutes.
  • 4.   Add the tomatoes and fresh basil, season with salt and pepper. Cook for another 5 minutes.
  • 5.   Prepare the crumble: mix flour, parmesan cheese, and butter with your fingers.
  • 6.   Place the vegetables in individual ramekins and sprinkle the crumble on top.
  • 7.   Bake for approximately 25 minutes.
