Zucchini Balls

Instructions

  • 1.   Peel and finely chop the onion, sauté it in a lightly oiled pan with curry until translucent.
  • 2.   Meanwhile, grate the zucchini.
  • 3.   Preheat the oven to 180°C (350°F).
  • 4.   In a bowl, mix the grated zucchini, chopped onion, grated cheese, finely chopped basil leaves, a little salt and pepper.
  • 5.   Once the mixture is homogeneous, add one whole egg + 1 egg white, previously beaten, and mix well.
  • 6.   Shape the mixture into balls with your hands and place them on a baking sheet lined with parchment paper. Bake for 20 to 25 minutes, depending on the oven. The balls should be golden brown.

  • 1 onion
  • 30 g of grated parmesan
  • 1 egg
  • 1 egg white
  • 4 leaf of basil
  • 2 teaspoon of red curry paste
  • 1 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
