Cauliflower and Parmesan Cake

Instructions

  • 1.   Cook the cauliflower in a pot of salted boiling water for about 15 minutes or more, it should be tender and easily mashed with a fork. Drain well.
  • 2.   Meanwhile, peel the red onion, cut 3 slices, then finely chop the rest. In a pan, heat the olive oil and sauté the onion for 10 minutes.
  • 3.   Preheat the oven to 180°C (350°F).
  • 4.   In a bowl, beat the eggs, add the flour and baking powder and mix with a whisk. Stir in the Parmesan, chopped onions, spices, salt, and pepper. Then gently fold in the cauliflower, being careful not to crush it.
  • 5.   Pour the mixture into a baking dish, arrange the reserved red onion slices on top, and bake. Cook for about 30 minutes (a knife inserted in the center should come out clean), then let it cool slightly before serving warm or at room temperature.

  • 80 g of flour
  • ½ teaspoon of baking powder
  • 80 g of grated parmesan
  • 1 teaspoon of dried basil
  • 1 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
