Easy Lemon Cream

Instructions

  • 1.   Carefully wash the lemon and grate the zest until you have a good teaspoon. Squeeze the lemon and strain the juice. Set aside. In a bowl, whisk the eggs with a fork. In a saucepan, melt the butter. Then add the sugar, lemon juice, and rum.
  • 2.   Bring to a boil and pour this mixture over the eggs, whisking to obtain a smooth cream. Add the zest to the mixture. Pour the cream back into the saucepan and bring to a boil again, stirring until the cream thickens. Then remove from heat. Pour the cream into pretty ramekins and let cool, keeping them refrigerated for 2 hours.
