Veal escalope with cherry tomatoes, garlic and parsley mushrooms - Low GI

Instructions
1. In a large skillet, heat olive oil. Season the veal escalopes with salt and pepper, then sauté them on each side. Add thyme and bay leaf, reduce the heat and continue cooking for 5 minutes, basting the escalopes regularly.
2. In another non-stick skillet, add olive oil and cook the cherry tomatoes and mushrooms. Then add minced garlic and soy sauce. Continue cooking for a few minutes. Serve the escalopes with the tomatoes and cooking juices. Adjust the seasoning to your taste.
