LOW GI CHOCOLATE CAKE

Instructions

. Preheat the oven to 180ºC (350ºF) Gas Mark 4.

. Separate the egg whites from the yolks. Whisk the egg yolks with the fructose until pale.

. Melt the chocolate in a double boiler with the canola oil.

. Incorporate them into the egg yolk and fructose mixture.

. Then add the almond puree and mix well. Beat the egg whites until stiff peaks form, then gently fold them into the mixture.

. Grease a 20 cm (8 inch) diameter cake pan and pour the batter into it.

. Bake at 180ºC (350ºF) for 20 minutes.
