LOW GI CHOCOLATE CAKE

Instructions

  • 1.   Preheat the oven to 180ºC (350ºF) Gas Mark 4.
  • 2.   Separate the egg whites from the yolks. Whisk the egg yolks with the fructose until pale.
  • 3.   Melt the chocolate in a double boiler with the canola oil.
  • 4.   Incorporate them into the egg yolk and fructose mixture.
  • 5.   Then add the almond puree and mix well. Beat the egg whites until stiff peaks form, then gently fold them into the mixture.
  • 6.   Grease a 20 cm (8 inch) diameter cake pan and pour the batter into it.
  • 7.   Bake at 180ºC (350ºF) for 20 minutes.

Ingredients for servings

  • 6 eggs
  • 70 g of fructose
  • 200 g of 70% dark chocolate
  • 4 cl of rapeseed oil
  • 3 tablespoon of almond puree without added sugar
  • salt (according to taste)
