Sausage Rougail

Rougail sausage is an iconic dish of Reunionese cuisine, prepared with sausages simmered in a sauce made of tomatoes, onions, garlic, ginger, and chili. Appreciated for its balance between simplicity and aromatic richness, it has become one of the most representative dishes of La Réunion and is now found well beyond the island.

Instructions

  • 1.   Prepare the sausages
    Boil the sausages for 10 minutes to remove excess fat.
    Drain and then cut into 3 to 4 cm pieces.
  • 2.   Prepare the aromatic base
    Slice the onions.
    Chop the garlic.
    Grate the ginger.
    Cut the tomatoes into small cubes.
    Crush the chilies if using.
  • 3.   Sauté
    In a Dutch oven:
    Heat the oil. Brown the sausage pieces for 5 minutes. Add the onions and let them soften for 3 minutes.
  • 4.   Add the aromatics
    Add garlic, ginger, thyme, turmeric, and chili. Mix for 1 minute.
  • 5.   Incorporate the tomatoes
    Add the tomatoes. Lightly salt and pepper.
    Mix and let it simmer over medium heat for 20 minutes.
  • 6.   Simmer
    Partially cover.
    Let it reduce until you have a thick and well-coating sauce.

Notes & Suggestions

  • A dish rich in protein and very filling, but quite salty: interesting to balance it with green vegetables or a fresh salad.
  • Serve hot with:
    hot white rice
    lentils or red beans
    optionally a spicy tomato rougail on the side
  • For a lighter version:
    opt for chicken sausages
    add bell peppers or zucchinis in the sauce
    serve with brown rice for more fiber

  • 4 sausages
  • 4 tomatoes
  • 2 onions
  • 3 garlic cloves
  • 1 tablespoon of olive oil
  • 1 pinch of grated fresh ginger
  • 1 teaspoon of thyme
  • 1 teaspoon of turmeric powder
  • salt (according to taste)
  • pepper (according to taste)

    Thyme, bay leaf, turmeric, and garlic are not used in any type of rougail, especially in a sausage rougail. And especially in Reunionese cuisine, olive oil is hardly used (if not never), but vegetable oil is used instead. Your sausage rougail, is it from Mars or Jupiter!!! Ridiculous!!!
