Flat Bean, Chorizo, Mozzarella, and Flat-leaf Parsley Tortillas

Instructions

  • 1.   Wash, dry, and remove the leaves from the parsley, then finely chop it.
  • 2.   Peel and cut the chorizo into small cubes. Drain and cut the mozzarella in the same way.
  • 3.   Crack the eggs into a bowl and beat them into an omelette using a whisk. Season with salt and pepper, then add the chorizo, flat-leaf parsley, and mozzarella.
  • 4.   In a hot pan, drizzle some olive oil and add half of the mixture.
  • 5.   Carefully pour the Cassegrain Provençal Flat Green Beans and then pour the remaining egg mixture.
  • 6.   Cook the tortilla over medium heat for 2 to 3 minutes. Flip the tortilla using a plate and cook the other side.
  • 7.   Place the tortilla on a serving dish, cut it into equal portions, and serve immediately.
