Instructions
1. Wash, dry, and remove the leaves from the parsley, then finely chop it.
2. Peel and cut the chorizo into small cubes. Drain and cut the mozzarella in the same way.
3. Crack the eggs into a bowl and beat them into an omelette using a whisk. Season with salt and pepper, then add the chorizo, flat-leaf parsley, and mozzarella.
4. In a hot pan, drizzle some olive oil and add half of the mixture.
5. Carefully pour the Cassegrain Provençal Flat Green Beans and then pour the remaining egg mixture.
6. Cook the tortilla over medium heat for 2 to 3 minutes. Flip the tortilla using a plate and cook the other side.
7. Place the tortilla on a serving dish, cut it into equal portions, and serve immediately.
