Piemontese-style pasta salad

Instructions

  • 1.   Cook the pasta in salted boiling water according to the cooking time indicated on the package, then drain and let it cool.
  • 2.   In another saucepan, cook the peeled potatoes in salted boiling water for about 20 minutes. Check the cooking with a knife blade, then drain, let them cool, and cut them into cubes.
  • 3.   Wash, peel, and remove the seeds from the tomatoes, then cut them into small cubes. Slice the pickles thinly. In a salad bowl, mix the pasta, diced potatoes, tomatoes, and ham, as well as the hard-boiled eggs, also diced. Add the mayonnaise, season with salt and pepper, and mix well. Garnish with a few parsley leaves and serve chilled.
