Instructions

  • 1.   Rinse and drain the lentils. Peel and chop the onion.
  • 2.   Remove the skin from the chorizo, cut it into small pieces. Sauté them for 2 minutes in a non-stick pan. Drain them on paper towels.
  • 3.   In a salad bowl, mix the vinegar, mustard, and salt. Pour in the oil while whisking and season with pepper. Add the lentils, onion, and chorizo, mix well. Serve warm, garnished with chives.
