Instructions

  • 1.   Preheat the oven to 450°F (230°C).
  • 2.   Peel the garlic and cut it into pieces. Pierce the roast and insert the garlic pieces. Brush the meat with softened butter. Place the roast in an ovenproof dish. Peel and slice the onions. Peel and cut the carrots into small sticks and add them around the roast. Add a glass of water.
  • 3.   Roast for 8 minutes to sear the meat, then reduce the oven temperature to 425°F (220°C) and cook for 20 to 25 minutes, depending on desired doneness.
  • 4.   Season with salt and pepper at the end of cooking. Add the rosemary. Let the roast rest for 6 to 8 minutes in the turned-off oven, with the door slightly open. Serve the roast sliced thinly with the onions, carrots, and cooking juices.
