Instructions

  • 1.   Wash, remove the leaves, and chop the dill. Wash and finely chop the chives. Peel and finely chop the shallot. Grate the lemon to collect the zest and cut it in half to extract the lemon juice. Set aside in the refrigerator.
  • 2.   In a saucepan, pour the heavy cream and bring to a boil for 2 to 3 minutes. Off the heat, add the 2 tablespoons of Greek yogurt. Then mix. Drain and crumble the tuna with a fork, add it to the contents of the saucepan. Mix everything well. Then add the chives, dill, shallot, lemon juice, and lemon zest. Season with salt, pepper, and a pinch of paprika. Then mix vigorously.
  • 3.   Let the light rillettes cool for 1 hour. Serve chilled, decorating your verrines with a few sprigs of tarragon.
