Crustless Carrot and Smoked Salmon Quiche with Zucchini

Instructions

  • 1.   Preheat the oven to 200°C (th.7).
  • 2.   Peel and dice the carrots. Peel the zucchini and slice it into rounds. Peel and finely chop the onion. Cut the smoked salmon into cubes.
  • 3.   Heat the oil in a pan, then add the carrots, onions, salt, pepper, oregano, and cumin.
  • 4.   Let it cook for 10 minutes over medium heat.
  • 5.   Meanwhile, whisk the eggs with the cream in a bowl. Add the flour, salt, and pepper, and mix well.
  • 6.   Incorporate the warm milk, grated cheese, and nutmeg, and mix.
  • 7.   Add the salmon, carrots, and onion.
  • 8.   Spread the mixture into a quiche dish.
  • 9.   Place the zucchini slices flat on top, without pressing down, and bake for 30 minutes.

  • 4 carrots
  • 150 g of smoked salmon
  • 100 g of grated cheese
  • 1 zucchini
  • 1 onion
  • 20 cl of semi-thick cream
  • 15 cl of milk
  • 3 eggs
  • 2 tablespoon of flour
  • 1 tablespoon of oil
  • 1 teaspoon of ground cumin
  • 1 tablespoon of fresh oregano
  • ½ teaspoon of nutmeg
  • salt (according to taste)
  • pepper (according to taste)
