Instructions
1. Preheat your oven to 220°C (425°F).
2. In an ovenproof dish, place your chicken that you have previously spread with butter and seasoned with fine salt and ground pepper.
3. Meanwhile, wash the potatoes thoroughly with clear water.
4. Place them around the chicken and add the bacon.
5. Sprinkle with mushrooms that you have cleaned and cut into small quarters, and season with fine salt, ground pepper, and stripped rosemary.
6. Bake for about 1 hour and 15 minutes.
7. Halfway through cooking, baste with half a glass of water and turn the chicken occasionally so that it is browned on all sides.
8. 5 minutes before the end of cooking, place the Roquefort that you have previously cut into small cubes in the dish.
9. Serve hot!
