Bacon and Camembert Stuffed Potatoes

Instructions

  • 1.   Scrub the potatoes and cook them in a pot of boiling water for 20 minutes.
  • 2.   Drain at the end of cooking and let cool.
  • 3.   Cut the bacon slices into small pieces.
  • 4.   Grill them in a dry pan.
  • 5.   Remove from heat.
  • 6.   Clean and dice the tomato.
  • 7.   Mix the tomato, chives, and grilled bacon in a bowl.
  • 8.   Cut the potatoes in half lengthwise.
  • 9.   Scoop out a little of the potato flesh with a spoon.
  • 10.   Fill the center of the potatoes with the bacon mixture.
  • 11.   Place the camembert slices on top.
  • 12.   Place the potatoes in an ovenproof dish.
  • 13.   Drizzle with olive oil, then season with salt and pepper.
  • 14.   Place under the broiler for a few minutes to warm them up.
  • 15.   Sprinkle with a little Espelette pepper when they come out of the oven.
  • 16.   Serve immediately.
