1. Scrub the potatoes and cook them in a pot of boiling water for 20 minutes.
2. Drain at the end of cooking and let cool.
3. Cut the bacon slices into small pieces.
4. Grill them in a dry pan.
5. Remove from heat.
6. Clean and dice the tomato.
7. Mix the tomato, chives, and grilled bacon in a bowl.
8. Cut the potatoes in half lengthwise.
9. Scoop out a little of the potato flesh with a spoon.
10. Fill the center of the potatoes with the bacon mixture.
11. Place the camembert slices on top.
12. Place the potatoes in an ovenproof dish.
13. Drizzle with olive oil, then season with salt and pepper.
14. Place under the broiler for a few minutes to warm them up.
15. Sprinkle with a little Espelette pepper when they come out of the oven.
16. Serve immediately.
