Chicken and Kohlrabi Stir-Fried Noodles

Instructions

  • 1.   After washing your vegetables, julienne the zucchini, carrots, turnips, and kohlrabi either with a knife, making thin strips, or with a mandoline (easier).
  • 2.   Finely slice the onion.
  • 3.   Cut the chicken breasts into thin slices.
  • 4.   In a wok (or a sauté pan), heat 3 tablespoons of oil (sesame or olive), then cook the carrots and turnips first. When the vegetables start to become tender (about 5 to 7 minutes in a wok and at least 10 minutes in a sauté pan), add the kohlrabi and onion. If necessary, add 2 tablespoons of water to prevent the vegetables from sticking to the bottom.
  • 5.   Add the chicken strips, ginger, and soy sauce according to your taste (for a moderate flavor, use 3 tablespoons of soy sauce and 1 tablespoon of ground ginger). Cook for another 5 minutes.
  • 6.   Meanwhile, cook the Chinese noodles according to the instructions (in unsalted boiling water for 4-5 minutes). At the end of cooking, drain and add them to the vegetable-chicken mixture. Mix well.
  • 7.   Serve hot.
