Sole fillets with shrimp and mushrooms in the Thermomix

Instructions

  • 1.   Place 2 peeled garlic cloves and 2 peeled and halved shallots in the Thermomix. Mix 3 sec/speed 7. Then scrape the sides of the bowl with the spatula.
  • 2.   Add 40 grams of olive oil to the Thermomix and sauté 5 min/120°C/.
  • 3.   Add 150 grams of white wine to the Thermomix and sauté 2 min/120°C/speed 1 without the measuring cup.
  • 4.   Add 200 grams of thick cream, ½ teaspoon of salt, and 2 teaspoons of fish stock to the Thermomix.
  • 5.   Add the steaming basket.
  • 6.   Place 300 grams of sliced button mushrooms in the steaming basket.
  • 7.   Place 500 grams of sole fillets on your work surface.
  • 8.   Sprinkle 2 pinches of salt and 2 pinches of pepper on the sole fillets.
  • 9.   Add the Varoma.
  • 10.   Roll each fillet and secure it with a wooden skewer, then place them in the Varoma.
  • 11.   Place 300 grams of cooked, peeled, and frozen shrimp on the Varoma tray and cook 22 min/Varoma/speed 4, then remove the Varoma.
  • 12.   Remove the steaming basket.
  • 13.   Add 1 teaspoon of cornstarch (adjust according to taste) to the Thermomix and cook 2 min/100°C/speed 3.
  • 14.   Divide the rolled sole fillets onto plates, garnish with the mushrooms and shrimp, and drizzle everything with the sauce.
