Light Shepherd's Pie

Instructions

  • 1.   Preheat the oven to 425°F (220°C).
  • 2.   Peel the potatoes, wash them, and cook them in salted water for 30 minutes.
  • 3.   Peel and chop the onion. Melt it in 10g of butter for 5 minutes.
  • 4.   Wash and chop the parsley.
  • 5.   In a bowl, mix the ground meat, onion, parsley, and egg. Season with salt and pepper. Set aside.
  • 6.   Mash the potatoes and add a little cooking water to soften them. Season with salt and pepper. Add the nutmeg. Incorporate the remaining butter in small pieces and stir constantly with a wooden spoon.
  • 7.   Spread half of the mashed potatoes in a buttered dish. Place the beef filling on top. Sprinkle with half of the cheese. Cover with the remaining mashed potatoes. Sprinkle with the remaining gruyere cheese. Bake in the oven, on the middle rack, for 30 minutes.
  • 8.   Serve with a fresh green salad of endives.
