Instructions

  • 1.   Preheat the oven to 220°C (425°F). Drain and rinse the button mushrooms, then slice them. In a non-stick skillet, heat the oil and sauté the mushroom slices for about 5 minutes.
  • 2.   Peel and finely chop the shallot, removing the germ. Wash the parsley and finely chop it, then add the chopped shallot and parsley to the mushrooms. Season with salt and pepper. Cook for 1 minute, stirring regularly with a wooden spoon.
  • 3.   Grease a baking dish with a knob of butter. Place the fish fillets cut into pieces in the dish. Pour the shallot and parsley mushrooms over the fish.
  • 4.   In a saucepan, heat a large amount of salted water. Add the rice and cook according to the instructions.
  • 5.   In a bowl, mix the heavy cream with the egg yolk and turmeric. Pour over the fish and mushroom gratin. Sprinkle with grated Emmental cheese.
  • 6.   Bake the fish gratin. The cooking time is about 15 minutes. When it is golden brown, remove the fish gratin from the oven and serve immediately.

  • 200 g of rice
  • 40 g of grated emmental
  • 20 cl of thick sour cream
  • 10 g of butter
  • 1 egg yolk
  • 1 shallot
  • 1 tablespoon of olive oil
  • 1 sprig of fresh parsley (optional)
  • 1 pinch of turmeric powder
  • salt (according to taste)
