Instructions

  • 1.   1. Separate the cauliflower into florets, rinse them, and steam them for 15 minutes.
  • 2.   2. Preheat the oven to 210°C (410°F). Melt the butter in a saucepan, then add the flour and mix. Pour in the milk and let it thicken over low heat, stirring constantly with a wooden spoon. Season with salt, pepper, and nutmeg.
  • 3.   3. Remove the rind from the Reblochon cheese and cut it into slices. Cut the ham into strips. Arrange the cauliflower florets in a gratin dish, add the Reblochon cheese and ham, and cover with the béchamel sauce.
  • 4.   4. Bake for 15 to 20 minutes until golden and bubbly. Serve hot.
  • 5.   Tip: You can replace half of the cooked ham with slices of cured ham.
