Instructions

  • 1.   Peel the turnips and potatoes. Put them in a sauté pan, cover them with salted water, add 40g of butter and honey. Let them cook for 5 minutes covered. Remove the lid. Continue cooking until the liquid is reduced, then turn them in the cooking juices so they caramelize.
  • 2.   Season the meat pieces with salt and pepper, then lightly flour them.
  • 3.   Heat 25g of butter and oil in a sauté pan. Brown the meat for 10 minutes. Sprinkle with thyme leaves and keep warm.
  • 4.   Pour the white wine into the sauté pan. Bring to a boil and let it reduce for 2 to 3 minutes, scraping the cooking juices. Put the meat pieces and turnips back into the sauté pan and coat them with the sauce. Serve immediately.
