1. Place the duck in a large bowl, season the skin with salt and pepper.
2. Add the orange zest and juice, garlic cloves cut in half, as well as the wine and herbs.
3. Mix well, cover, and let marinate in the refrigerator for 2 hours.
4. Preheat the oven to 190°C (375°F).
5. Pour the duck and marinade into a large baking dish, skin side down.
6. Peel and remove the seeds from the pumpkin. Cut the flesh into pieces.
7. Clean and cut the mandarins into pieces.
8. Place the pumpkin and mandarin pieces around the duck.
9. Bake for 25 minutes.
10. Flip the duck (skin side up) and continue cooking for another 20 minutes. Add a little water if necessary.
11. Adjust the seasoning at the end of cooking.
12. Serve hot with roasted potatoes.
