Roasted Duck with Pumpkin and Mandarin

Instructions

  • 1.   Place the duck in a large bowl, season the skin with salt and pepper.
  • 2.   Add the orange zest and juice, garlic cloves cut in half, as well as the wine and herbs.
  • 3.   Mix well, cover, and let marinate in the refrigerator for 2 hours.
  • 4.   Preheat the oven to 190°C (375°F).
  • 5.   Pour the duck and marinade into a large baking dish, skin side down.
  • 6.   Peel and remove the seeds from the pumpkin. Cut the flesh into pieces.
  • 7.   Clean and cut the mandarins into pieces.
  • 8.   Place the pumpkin and mandarin pieces around the duck.
  • 9.   Bake for 25 minutes.
  • 10.   Flip the duck (skin side up) and continue cooking for another 20 minutes. Add a little water if necessary.
  • 11.   Adjust the seasoning at the end of cooking.
  • 12.   Serve hot with roasted potatoes.
