Antillean Cod Fritters

Crumble the cod meat into a large salad bowl. Chop the onion, garlic, and parsley, as well as the chili pepper after removing its seeds, and add everything to the cod meat. In another container, prepare the dough: pour the flour and then form a well in the center. Gradually pour in, while gently mixing. When the dough is homogeneous, incorporate it into the cod meat and mix extensively. Sprinkle the baking powder, then squeeze the lime. Gently mix while incorporating into the rest of the dough. Let it rest for 30 minutes at room temperature. Heat the oil in a deep fryer. Take a small spoonful of dough and dip it into the oil. If it starts to fry instantly, the oil has reached the right temperature (about 180 °C). Form small fritters with 2 teaspoons, and dip them into the hot oil. Let them brown for a few minutes, then drain them and place them on absorbent paper. Enjoy the fritters while they're hot.
