Chicken Blanquette

Instructions

  • 1.   Cut the chicken into large pieces and brown them in a casserole dish with olive oil.
  • 2.   Peel and slice the onions and carrots into rounds. Cut them into pieces. Drain the button mushrooms.
  • 3.   Add them to the chicken along with the clove, salt, and pepper. Cover with cold water and bring to a boil. Then reduce the heat and let simmer covered for 1 hour and 30 minutes.
  • 4.   20 minutes before the end of cooking, melt the butter in a saucepan, add the flour and lemon juice. Mix well. Add the broth, ladle by ladle, while stirring constantly until you obtain a creamy sauce. Season with salt and pepper. Serve hot with the chicken and vegetables.
  • 5.   Serve hot with a side of basmati rice, fresh tagliatelle pasta, or a good homemade mashed potatoes.
