Zucchini, Emmental, and Bacon Waffles

Instructions

  • 1.   Peel the zucchini and grate them by hand or using a machine. Put everything in a sieve and press to remove the zucchini juice.
  • 2.   Fry the bacon in a pan.
  • 3.   Add the bacon, 3 eggs, 3 heaping tablespoons of flour, 1 tablespoon of mustard, and grated Emmental cheese.
  • 4.   If the mixture is too liquid, add some flour.
  • 5.   Preheat the waffle iron and grease the plates with a drizzle of olive oil.
  • 6.   Pour a quantity of batter and let it cook for 6-8 minutes.
  • 7.   Serve with a lettuce leaf and enjoy your meal!
