Stuffed Zucchini

Instructions

  • 1.   Wash the zucchini, do not peel them. Cut them in half lengthwise to obtain 4 boats. Hollow out each boat with a small spoon and set aside the flesh.
  • 2.   Sauté the zucchini flesh in half of the olive oil with the minced onion. Then add the ground meat and sauté again, mixing with a fork to crumble the ground meat.
  • 3.   In an ovenproof dish, arrange the zucchini boats side by side, fill them with the zucchini-meat stuffing, and pour the tomato sauce or a can of peeled tomatoes over everything (depending on whether you want more or less juice).
  • 4.   Bake at 200°C for about 30 to 40 minutes.
  • 5.   Enjoy your meal.

    I had some stuffing left over so I used it to fill a halved red pepper, all baked together in the same dish... Delicious!! Served with a mix of 3 quinoa as a side to add some variety ????
