Gourmet Quinoa Carbonara

Instructions

. Bring 2 liters of salted water to a boil, pour in the quinoa and let cook over low heat for 12 minutes. Drain.

. While the quinoa is cooking, sauté the bacon and onions for 2 minutes in a pan with a knob of butter.

. In a bowl, beat the egg yolk with the cream and then pour this mixture into the pan and season.

. Let it heat for a few minutes.

. Pour the quinoa into a dish, fluff it with a fork and serve it topped with the preparation and sprinkled with grated Emmental cheese.
Notes & Suggestions
You can sauté the bacon and onion with a sprig of thyme leaves to flavor the dish.
