1. Start by mixing the flour and salt, then add the olive oil and mix everything together.
2. Gradually incorporate the water and knead until you obtain a dough ball (if using a mixer, the dough should come off the sides).
3. Form 8 small balls of equal size and let them rise for about 30 minutes, covered with a damp cloth.
4. Roll out the balls into very thin pancakes (this is where the difficulty lies, the pancakes should be extremely thin).
5. Heat a pan over high heat and cook the pancakes for 30 seconds on each side (usually, after the second pancake, 20 seconds per side is enough).
6. Let them cool and fill them with the filling of your choice. Roll up the pancake and cut the ends at an angle.
