Leek and Smoked Salmon Quiche

Instructions

  • 1.   Preheat the oven to 375°F.
  • 2.   Slice the leeks. Melt them in a little butter. Once they are melted, add two tablespoons of cream, salt, pepper, and nutmeg to taste. Spread this mixture on the pastry crust and cover it completely with smoked salmon (either whole slices or strips).
  • 3.   In a large bowl, mix together the whole eggs, cream, milk (or more for desired consistency), grated gruyere cheese, salt, pepper, and optionally a little more nutmeg. Pour this mixture over the quiche and bake for about 30 minutes.

  • 4 tablespoon of liquid fresh cream
  • 6 tablespoon of milk
  • 1 pinch of pepper

  • 1 pinch of nutmeg
