Eggplant Rolls with Ground Meat

These eggplant rolls with ground meat are a delicious dish of Turkish origin.

Instructions

  • 1.   Wash the eggplants and cut them into long strips, about 3mm thick.
  • 2.   Sprinkle with salt and let them drain their water in a colander.
  • 3.   Prepare the ground meat by mixing all the ingredients together and combining well.
  • 4.   Take the eggplants and pat each piece on absorbent paper to remove excess water.
  • 5.   Fry in hot oil on both sides and drain on absorbent paper.
  • 6.   Take the ground meat and form sausages about 3 cm thick and the same width as the eggplant strips.
  • 7.   Roll each sausage in the eggplant to fully cover the meat.
  • 8.   Secure with a toothpick to prevent them from unraveling and garnish with a salted tomato slice and a piece of bell pepper.
  • 9.   Place the eggplant rolls in a gratin dish as you go.
  • 10.   Separate the rows of eggplants with half a potato slice.
  • 11.   Dissolve the tomato paste in boiling water and pour over the eggplant rolls to fully cover them (for even cooking of the ground meat).
  • 12.   Cover the gratin dish with aluminum foil and bake in a preheated oven at 180 °C for 20 to 30 minutes.

  • 500 g of ground beef
  • 1 onion
  • 2 garlic cloves
  • 2 teaspoon of breadcrumbs
  • 1 bunch of fresh parsley
  • 3 eggplants
  • 2 tomatoes
  • 1 green bell pepper
  • 2 potatoes
  • 2 tablespoon of tomato paste
  • 1 liter of water
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 tablespoon of olive oil
