Stuffed Potatoes with Bacon

Instructions

  • 1.   Preheat the oven to 150 °C (300 °F).
  • 2.   Microwave the potatoes after pricking them with a fork to prevent them from bursting.
  • 3.   Cut them in half and scoop out the flesh, leaving about 1/2 cm (1/4 inch) around the edges without damaging the skin. Place them in a baking dish.
  • 4.   Cook the bacon in a frying pan, then blend it. Peel and chop the onions.
  • 5.   Mash the potato flesh and mix it with the chopped onions, bacon, and heavy cream. Season with salt and pepper.
  • 6.   Fill each potato half with this stuffing.
  • 7.   Bake in the oven for 20 minutes.

Notes & Suggestions

  • Between reheating and defrosting, we often forget that the microwave can also be used to cook certain foods.
    First, prick your unpeeled potatoes in several places to prevent them from bursting. Arrange them in a circle on your turntable, protected by a paper towel. Set your microwave to the highest setting and start by cooking them for 10 minutes. Turn them over once after 5 minutes for more even cooking, and check regularly for doneness.
