Cheese ravioli with Parisian sauce in the companion

Instructions

  • 1.   In the bowl of the robot equipped with the Chopper, put the mushrooms and start at Speed 11 for 10 seconds. Set aside.
  • 2.   Replace the Chopper with the Mixer. Without washing the bowl, add the oil and butter, then start the robot at Speed 4 at 100 °C for 1 minute.
  • 3.   Add the flour and start the robot at Speed 4 at 100 °C for 2 minutes.
  • 4.   Add the salt, pepper, bouillon cube, water, and reserved mushrooms, then start at Speed 6 at 70 °C for 8 minutes (Sauce program for the old Companion).
  • 5.   Add the cream and start the robot at Speed 4 at 100 °C for 2 minutes.
  • 6.   Add a tablespoon of lemon juice and stir. Cook the pasta in a pot of salted boiling water and serve the pasta with the Parisian sauce garnished with Parmesan.

Notes & Suggestions

  • You can add an egg yolk to the Parisian sauce.

  • 750 ml of water
  • 200 ml of liquid fresh cream
  • 1 lemon
  • 500 g of cheese ravioli
  • 20 g of parmesan
  • 1 pinch of salt and pepper
