MARINATED ZUCCHINI AND SHRIMP WITH CURRY

Instructions

  • 1.   Peel and finely slice the shallots. Wash the zucchini, trim the ends, and cut them into very thin slices without peeling them. Arrange them in a shallow dish.
  • 2.   Prepare the marinade: mix olive oil, lemon juice, salt, pepper, curry powder, shallots, and parsley.
  • 3.   Place the shrimp on top of the zucchini. Pour the marinade over them. Cover the dish with plastic wrap. Let it marinate in the refrigerator for at least three hours.
  • 4.   Mix everything together just before serving.

  • 200 g of peeled shrimp
