Upside-Down Chicken Cordon Bleu

Get the kids involved in the breading process by having them help coat the chicken cutlets. They'll love playing little chefs in the kitchen.

Instructions

  • 1.   Place the 100g chicken cutlets between two sheets of plastic wrap and flatten them with a rolling pin.
  • 2.   Season the cutlets with salt and pepper on both sides.
  • 3.   Bread the cutlets by coating them in flour, then beaten egg, and finally breadcrumbs.
  • 4.   Preheat the broiler in the oven.
  • 5.   Refrigerate the breaded cutlets for 10 minutes.
  • 6.   Heat oil in a skillet over medium heat. Cook the cutlets until golden brown on both sides.
  • 7.   Arrange the cooked cutlets in a baking dish. Top each cutlet with a slice of ham and Swiss cheese. Place under the broiler until the cheese is melted and bubbly.

Notes & Suggestions

  • This recipe can also be made with veal or turkey cutlets.
    Flattening the cutlets is not necessary.
