Pot-au-feu (Beef Stew)

Instructions

  • 1.   In a pressure cooker, bring about 2 liters of water to a boil with salt and all the vegetables and seasonings.
  • 2.   When the water boils, add the meat.
    Close the pressure cooker.
    Let it simmer for 1 hour and 10 minutes from the start of the valve rotation.
  • 3.   Open the pressure cooker, add the peeled potatoes.
    Close the pressure cooker and let it cook for another 10 minutes from the start of the valve rotation.
  • 4.   Drain the meat.
    Serve it surrounded by vegetables, accompanied by coarse salt and pickles.

Notes & Suggestions

  • Use chuck or short ribs.
  • The broth can be served as is with a cracker in each plate or thickened with tapioca or vermicelli.
    Let it boil uncovered for 5 minutes.
