Chicken breasts à la montagnarde.

Chicken breasts baked in the oven with cheese and ham, served with mushroom rice. Can also be made with leftover raclette cheese.

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Cut the chicken breasts lengthwise without separating them.
  • 3.   Season the inside with salt and pepper, place a slice of Emmental cheese (about 15g each) inside, close them back up, and wrap them with a slice of country ham, securing with a toothpick.
  • 4.   (Optional: Heat a tablespoon of oil in a pan, brown the chicken breasts over high heat.)
  • 5.   Place the chicken breasts in a roasting dish and bake for 20 minutes.
  • 6.   Meanwhile, melt the minced onion in 20g of butter.
  • 7.   Add the sliced button mushrooms, season with salt, and cook until they release their water.
  • 8.   Add the rice, and pour in twice its volume of water.
  • 9.   After 15 minutes of cooking, add the peas and cook for another 10 minutes.
  • 10.   Serve the rice with the chicken breasts.
