Chicken Sauté with Figs

Instructions

  • 1.   Cut the chicken breasts into thin slices and quarter the figs.
  • 2.   In a pan with peanut oil, sauté the chicken slices for about 10 minutes. They should be golden brown.
  • 3.   Then add the figs and the juice.
    Let simmer on low heat for another 5 minutes.
  • 4.   Season with salt and pepper to taste, then quickly incorporate the Greek yogurt into the hot mixture.
    Serve immediately.

Notes & Suggestions

  • You can also add the zest of half an orange and 2 tablespoons of Cointreau at the same time as the figs and orange juice.
