1. Preheat the oven to 250°F (th 4)
2. Precook the pork ribs in the oven for 1 hour.
3. Caramelize the brown sugar in a pan over high heat. Pour in the vinegar and cook for about 3 minutes until the sauce becomes slightly syrupy.
4. Add minced garlic, finely chopped shallots, tomato pulp, Worcestershire sauce, and ketchup.
Season with salt and pepper.
Simmer for 20 minutes.
5. Coat the pork ribs with the sauce.
6. Marinate the pork ribs for at least 2 hours, flipping them every hour.
7. Prepare a bed of hot coals in the barbecue. Place the ribs on the hot grill.
Let them brown for 5 minutes per side, season with salt and pepper.
8. Move them to the edges and continue cooking for another 10 minutes, flipping them frequently.
Serve immediately.
