Grilled Ribs with Cowboy Sauce

Instructions

  • 1.   Preheat the oven to 250°F (th 4)
  • 2.   Precook the pork ribs in the oven for 1 hour.
  • 3.   Caramelize the brown sugar in a pan over high heat. Pour in the vinegar and cook for about 3 minutes until the sauce becomes slightly syrupy.
  • 4.   Add minced garlic, finely chopped shallots, tomato pulp, Worcestershire sauce, and ketchup.
    Season with salt and pepper.
    Simmer for 20 minutes.
  • 5.   Coat the pork ribs with the sauce.
  • 6.   Marinate the pork ribs for at least 2 hours, flipping them every hour.
  • 7.   Prepare a bed of hot coals in the barbecue. Place the ribs on the hot grill.
    Let them brown for 5 minutes per side, season with salt and pepper.
  • 8.   Move them to the edges and continue cooking for another 10 minutes, flipping them frequently.
    Serve immediately.

  • 4 shallots
  • 4 garlic cloves
  • 400 g of crushed tomato pulp
  • 60 g of brown sugar
  • 4 tablespoon of wine vinegar
  • 6 tablespoon of ketchup
  • 2 tablespoon of Worcestershire sauce
  • 1 salt and pepper
