Instructions
1. Cook the rice according to the package instructions.
Drain and rinse with cold water.
2. Peel the green asparagus, cook them for 5 minutes in boiling salted water with frozen peas.
Drain and cut the asparagus into pieces.
3. Cut the avocado in half, remove the pit, peel it, and slice it.
4. Cut the Grisons meat into strips.
Rinse and separate the basil leaves.
5. Combine all the ingredients in a salad bowl.
6. Squeeze the half lemon.
Whisk the juice with olive oil, salt, and pepper.
Pour this dressing over the salad and mix carefully. Serve immediately.
Notes & Suggestions
Grisons meat, served alongside cured hams, is made from lean beef that is simply dried. Rich in iron, it only has 150 calories per 100 grams. Its Italian cousin, bresaola, is equally recommended.
