Salad with cured ham and flavors of the south.

Instructions

. Rinse the tomatoes with clear water and cut them in half.

. Drain the feta and artichokes.

. Cut the ham into strips.

. Mix all these ingredients in a large salad bowl with pine nuts, vinegar, and pesto.
Season with pepper.

. Wash the lettuce and separate the leaves, roughly chop them if they are too large.

. Add them to the salad bowl just before serving, mix well and sprinkle with Parmesan shavings.
Notes & Suggestions
It is important not to add the lettuce too far in advance as the dressing "cooks" it and makes it soggy.
You can replace the feta with mozzarella balls and the sucrines with any crunchy lettuce.
