Creamy Rice Pudding with Companion

Instructions

  • 1.   In the robot with the mixer attachment, add the milk, heavy cream, sugar, and vanilla extract. Cook at speed 3 at 95 °C for 8 minutes without the lid.
  • 2.   Then add the rice and cook at speed 3 at 95 °C for 30 minutes, still without the lid.
  • 3.   At the end of cooking, let the rice rest for about 30 minutes.
  • 4.   Transfer to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours before serving.

Notes & Suggestions

  • Tip: add a little orange blossom water or citrus zest.
