Carbonara Pasta with Companion

Instructions

  • 1.   Cook the penne in a large pot of water according to the instructions on the packaging.
  • 2.   Cut the pancetta into small pieces and put it in the robot with the mixer attachment. Add the oil and start the simmer program P1 at 130 °C for 6 minutes without the lid.
  • 3.   At the end of the program, add the cream and the egg yolk, then start the robot at speed 5 at 85 °C for 8 minutes.
  • 4.   Pour the sauce over the drained pasta, add the parmesan cheese and generously season with pepper. Mix well and serve.

Notes & Suggestions

  • Tip: You can replace the pancetta with smoked bacon.
