Instructions

  • 1.   Peel the onions and roughly chop them. Wash the bell pepper, remove the seeds, and cut it into pieces. In the robot equipped with the ultrablade chopper, put the onions and bell pepper, then mix at speed 11 for 15 seconds.
  • 2.   Replace the ultrablade chopper with the mixer. Crush the garlic cloves with the blade of a knife, then put them in the robot with the olive oil. Start the simmer program P1 at 130 °C for 8 minutes without the cap.
  • 3.   Cut the zucchini, eggplant, and tomatoes into pieces.
  • 4.   At the end of the program, add the broth and vegetables. Season with salt and pepper, then start the simmer program P2 at 95 °C for 30 minutes.
  • 5.   Serve hot or cold.
