Two Cabbage Gratin

Instructions

  • 1.   Preheat the oven to 425°F (210°C).
  • 2.   Separate the cauliflower and broccoli into small florets, then wash them.
  • 3.   Cook the cabbage in a pressure cooker for 8 minutes once it reaches pressure.
  • 4.   Prepare the béchamel sauce.
    Easy microwave method: melt the butter (30 seconds to 1 minute on 900W); mix in the sifted flour; boil the milk (about 5 minutes on 900W) and gradually add it to the flour/butter mixture; mix well; microwave for another 1 minute 30 seconds to 2 minutes on 900W, stirring well and adding salt and pepper. Finally, add 35g of grated gruyère cheese.
  • 5.   Place the cabbage in a lightly buttered gratin dish, add the bacon lardons and diced ham. Pour the sauce over the top and sprinkle with the remaining grated gruyère cheese. Add a little breadcrumbs and a few knobs of butter.
  • 6.   Bake until the gratin is golden brown, then serve immediately.

Notes & Suggestions

  • You can also make a three cabbage gratin using 400g of each cabbage and adding one quarter of green cabbage.
  • It is also possible to make it without bacon lardons or diced ham as a side dish.

  • 500 g of cauliflower
  • 500 g of broccoli
  • 100 g of smoked bacon
  • 100 g of ham cubes
  • 70 g of grated Gruyère cheese
  • 50 g of salted butter
  • 50 g of wheat flour
  • ½ liter of semi-skimmed milk
  • 1 pinch of salt and pepper
  • 2 tablespoon of breadcrumbs
